The Allay was added in the Minecraft 1.19 Wild Update. When you give it an item, it will fly around looking for more of that specific item.

While the Copper Golem, added in the Copper Age Update, will remove items from copper chests and place them in a wooden chest that has more of that specific item.

The update sparks debate because both can be used to organise items in different ways.

Copper golems remove items from copper chests and place them in wooden or trapped chests. However, these chests have to be either empty or contain the same item.

If there aren’t any copper chests, the copper golem will remain idle, and if all or one of the chests is full, you will need to free up space to allow the golem to organise the items.

Instead, the allay is a flying mob. When you give it an item, it will search for and pick up matching items nearby, then return with more of that particular item or similar items.

The Allay will give the items to the player who gave it the original item, or, if a NoteBlock is played, it will drop the items near that NoteBlock instead. You can place hoppers around the chest.

The allay doesn’t teleport like a wolf, so if you sprint, travel by boat, or ender pearl away, etc. The allay can’t keep up since it moves at a moderate speed. Always look back to make sure it’s still following and stay in open paths.

You can place the items in the chest, or have the allay collect them and place them in hoppers.

They can work together. When the allay drops items into the hoppers connected to copper chests, the copper golem can organise them and place them into nearby regular chests.

Step 1:

To craft a copper golem, you will need a carved pumpkin. To carve a pumpkin, long-press on it with shears.

Place the pumpkins on top of a copper block, and the golem will immediately spawn along with a copper chest.

Where to find the Allay

The allay has a 50% chance of spawning in cages near pillager outposts. You would need to defeat the pillagers first, then rescue the allay. After you give it an item, it will begin following you around and looking for more items.

I highly recommend wearing a full set of armour, whether it is a mix of diamond, iron or both, a shield, a sword and a bow. Those tools will help you defeat the pillagers.

Overall, the “best” helper all depends on what you need. If I were to pick a winner, it would be the copper golem, since most players may need the automatic chest sorting in farming. If you have a large mob farm, the allay will be great, as you wouldn’t need so many hoppers. They can collect dropped items and place them in the hoppers connected to chests.
